A lot of celebrities are now jumping into the whole vegan lifestyle. Veganism isn’t strictly for hippies anymore, it is now more of a healthy lifestyle choice.

Eating vegan can be difficult due to the limited vegan recipes you can find, but there are a lot of fellow vegans out there that are making the conscious choice of fixing this problem. There are now websites, books, classes and more dedicated to Veganism. Here are some quick and easy vegan breakfast recipes you can try to help start your day.

Flourless Breakfast Cookies

This yummy breakfast sweets are perfect for those on the go days. This cookie doesn’t require sweets and uses banana as a natural sweetener. The flourless breakfast cookies are doughy, dense and soft. You can store them in your bag for the afternoon as a snack. This is a great healthy snack for the kids and can be used as an amazing post workout snack. You can change the recipe by adding a different ingredient that would go according to your taste such as nuts or seeds.

Ingredients

2 cups rolled oats
8 teaspoons jam
Peanut butter or vegan butter (optional)
3 tablespoons ground flax seed
1 cup mashed ripe banana
1 teaspoon cinnamon
1/8 teaspoon fine grain sea salt

Directions

Prepare all the ingredients, measure them and place them in separate bowls. Preheat your oven to 350 degrees F and place parchment paper in your baking sheet. Take your food processor out and place in the oats and pulse it until it turns into a coarse meal form. Don’t over pulse it or it may turn too powdery. Take a large bowl and add in the bananas, take a spoon and use the back of it to smash the bananas. After mashing add in all the ingredients except for the butter and ham. You can use a wooden spoon to mix the ingredients. The mixture will be dense and wet. You can use an ice cream scooper to make eight mounds or use your hands to create tiny circular portions. Place the flourless dough on the baking sheet. You don’t have to create too much space between the cookies, sine it does not spread out like normal cookies. Take your jam and use a teaspoon to scoop a small amount. Use your thumb to press down on the flourless dough and create a tiny well. Place the jam in this well and make sure that it does not overflow. Bake the cookies for 10 to 13 minutes. Check every minute, remove the cookies from the oven when it turns firm but still doughy and soft in the middle. Transfer your cookies from your baking sheet to a cooling rack. Leave it to cool for about 10 minutes. You can serve the cookies topped with vegan butter.

Salsa-Tofu Breakfast Burrito

This yummy and filling breakfast burrito are perfect for vegan people. It gives you protein that is usually lacking in vegan diets. This easy to make burrito can be created in under 8 minutes, making it a perfect morning meal. You can even skip using the oven and putting most of the main ingredients in the microwave. Make sure to use soy cheese for this vegan burrito.

Ingredients

1 8-inch whole-wheat tortilla
1 teaspoon extra-virgin olive oil
1/2 cup crumbled extra-firm tofu
2 tablespoons fresh salsa
2 tablespoons shredded Monterey Jack cheese
Pinch of salt
Pinch of freshly ground pepper

Directions

Take out your skillet and turn on the stove, medium to high heat. Wait for the skillet to heat up a little and put in the oil. Add the tofu to the skillet and cook it to your desired shade, stir the tofu occasionally to prevent it from getting that burnt after taste. When your tofu starts to go brown, add in the salsa, pepper and salt. Stir the ingredients and continue to cook it until it is evenly heated. Take out your whole wheat tortilla and spread soy cheese evenly. Take a spoonful of the tofu mixture in the skillet and place it in the middle of the tortilla and roll it. Fold the ends to prevent it from spilling everywhere.

Many vegan recipes use a lot of fruits and vegetable making it nutritiously satisfying. Vegan diets are great since you are able to consume more produce and is totally animal cruelty free.
